Orzo Salad

Orzo-salad

I fell in love with an orzo salad at a child’s birthday party. It was love at first, second, and fifteenth bite. I’ve since recreated my own version many times and I find that my love has not faded.

Ingredients:

  • 1 pound uncooked orzo
  • 1/2 cup olive oil
  • 2/3 cup red wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • As many drained, pitted, and sliced in half Kalamata olives as you like
  • As much fresh, chopped basil as you like
  • 6 ounces of crumbled Feta cheese
  • 1 can of red kidney beans, drained

Directions:

 In addition to the vinegar,

Dressing-and-whisk

 

Orzo-in-collander

 

Kalamata-Olives-and-Basil

 Add fresh chopped basil to taste.

      Feel free to divide the recipe in half. I make it in this size because the orzo tends to come in a 1lb package, but it makes enough to feed a small army. I don’t mind because I eat the left overs the rest of the week.

      Orzo is a rice shaped pasta. Put that in your pipe and smoke it.

      The kidney beans came about because I used to always put grilled chicken in it and I didn’t have any. I wanted it to be a little heartier and the kidney beans did the trick.

    Don’t suppose you have any idea about the calorie content? It sounds as though it is likely to be reasonably low – but high on protein, so a sure winner.
